Where she comes from

Cayenne grew up in the street kitchens of the Industrial zone, between a father who ran the grill and a pot older than she was. When the factories closed, she pushed her rolling canteen toward the club exits, where the night gets hungry at three in the morning. Her rule was born the first night: no heat rating on the chalkboard. Partygoers cried, swore, ordered a second plate. She realized she wasn’t selling food — she was selling a trial you walk away from proud, eyes red and wallet open.

How she works

Her counter is a makeshift bar bolted onto the canteen, six stools, not one more. She works her chili grinder over everything — plates, cocktails, conversations — and remembers the name of whoever held the strongest dose. Late-night stragglers come to her to get back on their feet: she serves them the slow burn, the one that builds for ten minutes and wakes you up better than coffee, and they head back to the dance floor leaving far more on the bar than the price of the plate.

Between orders, people confide in her the way they do with every counter queen — except she answers by adding more chili, literally. A heartbreak costs two turns of the grinder. A betrayal, three. Nobody has ever finished the betrayal plate.

What keeps her standing

What keeps her going is the game. Watching a tough guy melt into tears on a stool keeps her grinning all week, and she keeps an album under the counter of her willing victims. During slow hours, she scouts other canteens as an anonymous customer, spots the kid who handles a fryer the way other girls handle a stage, and slips her a card. She says she’ll pass the fire on the day she finds someone who doesn’t spit it back out.

The bar is a school of memory and patience. You learn first names, orders, heartbreaks; the art of turning a stranger into a regular and a regular into family. Above all you learn to listen — really, wiping a glass, never looking like you’re waiting for the end. What you lose: your evenings, and the illusion that people are complicated. You know a Counter Queen by this: she wipes what’s already clean, remembers your order from two years ago, and closes the till without looking… while you’re looking at her.
